If I have a melody that runs longer than a bar, do I have to create multiple segments in the pattern/set screen to cover the whole movement or is there a way to programme the entire number of bars stipulated in the timing screen? I'm sure I'm missing something...

No, you don't have to create multiple patterns for that.
You can change the number of bars for a pattern to a max of 8 bars.
1. Press the view menu in the tool bar on top
2. Select "Timing & Measure"
3. Change the Length in Bars

A measure in G-Stomper's view is a set of max 16 steps. A pattern can have 8 such measures. It's up to you how many G-Stomper's "measures" represent a musical measure. E.g. if you set bar length in a G-Stomper's pattern to 16 steps and the step length is set to 1/8th, you have two 4/4 musical measures in a G-Stomper's single measure.
If you have more than a single measure in a pattern, you can switch current measure for editing on the bottom left corner of edeting screens. If you're using VA-Beast for entering music, you can set note length so it goes across measure boundaries.
